october 17-21

In this week's CSA box: acorn squash, cilantro, cherry tomatoes, green beans, sweet potatoes, green peppers

stuffed acorn squash  much better with goat cheese.

Nuevo Chipotle Beef in Butternut Squash Boats  Wanted something different to do with the butternut squash than soup.  Nice and spicy.


Saffron Chicken, Boiled Lemon and Green Bean Salad  I was worried that Eric would think this dish was too summery for a chilly, rainy Fall evening.  Thankfully, he didn't mind.  I think pairing it with the Forbidden Rice helped!  


Spicy Parmesan Green Beans and Kale with fish

october 10 -14

Beer and Cheddar Soup I liked it...Eric thought it had a bit of a tanginess (if that's a word) to it, not sure if that was from the smoked cheddar or the beer I used. I think we'll try this again with different cheeses. I thought it should have been a little bit thicker too.

Butternut Squash Soup Love this soup! Again, I kind of blend two different recipes for this one. Had leftover bacon from the beer soup so I topped the soup with it.


Burgers and brussel sprouts Thought the nice weather would hold out and we could grill out our England Acres burgers....not so lucky. I used the grill pan instead. It did the trick but not the same as grilling out. The brussel sprouts turned out to be a flop. I started roasting them before I needed to pick Cullen up from school, so I turned off the oven when we needed to pick him up but left the sprouts in the oven to continue cooking. I guess the oven stays hotter than I thought because they were over cooked. Also, I didn't have anchovies and then I forgot to add in the capers altogether.

Chicken Mole Torta paired with our CSA wax beans...good stuff!


Eggplant with Nido's Sauce can't go wrong with Nido's sauce and fried CSA eggplant!

september 26-30 & October 3-7

Chicken Mole Torta didn't get around to this one this week.

Brown Butter Ravioli with walnuts Definitely better with fresh sage...I didn't have any so I had to use dried sage. Still good, just not as good. With premade pasta, this meal is super quick and easy!

Autumn Golden Vegetable Lasagna So glad I finally got around to making this one. We have another cream based lasagna that we find to be too sweet, but this one was just right. The basil was supposed to go in the layers but after I assembled the whole thing, I realized I forgot the basil. So I sprinkled it on top. Also, I substituted a delicata squash for a butternut squash b/c we got a delicata in our CSA.


Pulled Bottom Round with Spicy Sweet Potato Wedges Eric put the bottom round (from England Acres) in the crock pot with a beer and a little barbeque sauce and the it go for hours (and hours). The day we had it, I didn't feel like spicy sweet potatoes. So instead, I roasted them in the oven with some maple syrup and topped with a little brown sugar when I plated it. The sweet potatoes are fresh out of our CSA box.


Lemon Risotto with Scallops


Arugula, Potato and Green Bean Salad Eric found this recipe when searching for ways to use up our CSA potatoes and green beans. We had this with the leftover lasagna. Funny thing about the salad...when Eric asked what was for dinner and I said, he kind of grumbled. I said well you're the one who found the recipe and we have all the stuff. Eric said that every time he took a bite of the salad he wanted NOT to like it but he did like it. So what he thought was going to be an unsatisfying dinner turned into a very good dinner after all. There's still no doubt in my mind that are kids are picky because of him:) The positive side is there's still hope for my kiddos to eat well one day!



Blue Hubbard Squash Casserole Got another hubbard squash in the CSA...wanted to try something new. Good, but nothing too exciting. We had a little leftover chicken we served it with. I think it could have used more rice.


Spaghetti Squash with Sausage We had a spaghetti squash and peppers in the CSA so I made it with England Acres sausage.

Chicken Tacos Next time you make tacos, please try making it with your own spices rather than a packet...I promise you won't be disappointed!
