Garlicky Linguine with Seared Shrimp, Chipotle, and Queso Anejo The farmer's market had a spaghetti squash, so I used that instead of the linguine. And although the corn "didn't go" with this dish, I couldn't resist it either at the market. The spaghetti squash is really easy to make...cut in half, scoop out the seeds, cover with "plastic wrap" and microwave for about 8 minutes and then scrap out.
