Butternut Squash, Coconut, and Pigeon Pea Stew
I liked it...but Eric didn't like the texture.


Creamy Carrot Soup
When we're in Ellicott City, we like to go to Johnny's Bistro.  He makes the best creamy carrot and ginger soup.  So I tried to change this recipe up to taste like his...not quite, but it was still good.  We had some prosciutto, so we added it.


Thanksgiving!  Can't believe I didn't take any pictures of the food....trust me, it was good!

Our last CSA box of the season...so sad for me!! Here's what we did with the turnips w/ greens, broccoli, cherry tomatoes and (sweet potatoes-on the following week)...

  Fettuccine with Gorgonzola and Broccoli  Good!


Scallops with Saffron Cream and Turnip Greens  Can't remember much here except it was very good!  Would make a nice pasta sauce, actually...

Creamy Turnip Soup with Cheese Crisps
Made grilled cheese with gruyere cheese, instead of the cheese crisps.  Wished the soup was thicker, too thin for us...kind of like having turnip broth.  The flavor was good just need texture.

october 17-21

In this week's CSA box: acorn squash, cilantro, cherry tomatoes, green beans, sweet potatoes, green peppers

stuffed acorn squash  much better with goat cheese.

Nuevo Chipotle Beef in Butternut Squash Boats  Wanted something different to do with the butternut squash than soup.  Nice and spicy.


Saffron Chicken, Boiled Lemon and Green Bean Salad  I was worried that Eric would think this dish was too summery for a chilly, rainy Fall evening.  Thankfully, he didn't mind.  I think pairing it with the Forbidden Rice helped!

october 10 -14

Beer and Cheddar Soup I liked it...Eric thought it had a bit of a tanginess (if that's a word) to it, not sure if that was from the smoked cheddar or the beer I used. I think we'll try this again with different cheeses. I thought it should have been a little bit thicker too.

Butternut Squash Soup Love this soup! Again, I kind of blend two different recipes for this one. Had leftover bacon from the beer soup so I topped the soup with it.


Burgers and brussel sprouts Thought the nice weather would hold out and we could grill out our England Acres burgers....not so lucky. I used the grill pan instead. It did the trick but not the same as grilling out. The brussel sprouts turned out to be a flop. I started roasting them before I needed to pick Cullen up from school, so I turned off the oven when we needed to pick him up but left the sprouts in the oven to continue cooking. I guess the oven stays hotter than I thought because they were over cooked. Also, I didn't have anchovies and then I forgot to add in the capers altogether.

Chicken Mole Torta paired with our CSA wax beans...good stuff!


Eggplant with Nido's Sauce can't go wrong with Nido's sauce and fried CSA eggplant!

september 26-30 & October 3-7

Chicken Mole Torta didn't get around to this one this week.

Brown Butter Ravioli with walnuts Definitely better with fresh sage...I didn't have any so I had to use dried sage. Still good, just not as good. With premade pasta, this meal is super quick and easy!

Autumn Golden Vegetable Lasagna So glad I finally got around to making this one. We have another cream based lasagna that we find to be too sweet, but this one was just right. The basil was supposed to go in the layers but after I assembled the whole thing, I realized I forgot the basil. So I sprinkled it on top. Also, I substituted a delicata squash for a butternut squash b/c we got a delicata in our CSA.


Pulled Bottom Round with Spicy Sweet Potato Wedges Eric put the bottom round (from England Acres) in the crock pot with a beer and a little barbeque sauce and the it go for hours (and hours). The day we had it, I didn't feel like spicy sweet potatoes. So instead, I roasted them in the oven with some maple syrup and topped with a little brown sugar when I plated it. The sweet potatoes are fresh out of our CSA box.


Lemon Risotto with Scallops


Arugula, Potato and Green Bean Salad Eric found this recipe when searching for ways to use up our CSA potatoes and green beans. We had this with the leftover lasagna. Funny thing about the salad...when Eric asked what was for dinner and I said, he kind of grumbled. I said well you're the one who found the recipe and we have all the stuff. Eric said that every time he took a bite of the salad he wanted NOT to like it but he did like it. So what he thought was going to be an unsatisfying dinner turned into a very good dinner after all. There's still no doubt in my mind that are kids are picky because of him:) The positive side is there's still hope for my kiddos to eat well one day!



Blue Hubbard Squash Casserole Got another hubbard squash in the CSA...wanted to try something new. Good, but nothing too exciting. We had a little leftover chicken we served it with. I think it could have used more rice.


Spaghetti Squash with Sausage We had a spaghetti squash and peppers in the CSA so I made it with England Acres sausage.

Chicken Tacos Next time you make tacos, please try making it with your own spices rather than a packet...I promise you won't be disappointed!

september 18-23

Warm Shrimp Salad with Kamut, Red Chile and Tarragon Substitued our CSA jalapenos for the red chiles. The only kamut I could find was kamut flakes. They were super quick to make probably about 3 minutes versus the recipe directions.

Poblano and Spinach Posole - (chili) Tried 3 different grocery stores...no poblanos...we'll try again another time.

Meatball Subs - if you want the recipe on these, let me know.
Autumn Golden Vegetable Lasagna (the boys had their belt test on Friday, so we treated them with a dinner out afterwards.) Pushed to next week.

Blue Squash risotto with radicchio Must not have been the week for radicchio...after checking 2 stores, I gave up and used arugula instead. After getting a blue hubbard squash in our CSA box, I found this recipe and I have to say it may have been the tastiest risotto we've ever made. I added our CSA jalapenos which added a great flavor. I put some arugula in the dish but also served it on the side along with CSA cherry tomatoes. We had some (England Acres) bacon leftover from another meal so I crumbed some on top.

Balsamic & Parmesan Cauliflower with grilled fish We used grouper...it was pretty good, not too "fishy". Eric thought it was alittle plain tasting.

Seared Scallops with chorizo and potatoes Working through our CSA potatoes...For a Rick Bayless recipe, we thought it was missing something. We watched a show of his recently and he made a bunch of stuff along with this recipe so we think we may have forgotten what else went with it. It was still good though.

Beer battered cod sliders Eric loves fried fish. I used a whole wheat flour...don't get me wrong, it was still very good, just probably would have been better with regular flour.

Stuffed Squash with herbed goat cheese Very good! We got 2 acorn squash in our CSA box...thank you Farmer Rick! I didn't have goat cheese so I used feta instead.

Curry Butternut Squash Received a butternut squash in the CSA. I blended two different butternut squash soup recipes for this one. If anyone is interested in making it, let me know...because I'm not going to waste my time typing it up if no one is making it. Also, I made homemade focaccia bread too. Again, if you want the recipe, let me know.

Skillet Gnocci with Spinach, Tomatoes, and White Beans flavorful! I added some squash and zucchini because we had some for our CSA box.
Balsamic & Parmesan Roasted Cauliflower with Grilled Fish (pushed to next week...had leftovers instead)
Seared Scallops with Chorizo and Potato Tacos (pushed to next week...had leftovers)
Frontera's Award-Winning Chili Rick Bayless never disappoints with his recipes. The leftovers the next day were even better.
Greek Wraps Good, but the pita bread I got wasn't that good...very dry. Next time, we'll try with another kind.

august 28 - september 1st

Maryland Crab and Sweet Corn Chowder I added a seeded jalapeno for some kick however it really didn't add much spice. I guess since I put 2 whole jalapenos in the gazpacho, I thought it would be too much for this dish. But like Eric pointed out, the cream probably cut some of the spice. Next time, I wouldn't seed the pepper and see what happens. You can't live in Maryland and not season crab with Old Bay...so I do and I did.
Mexican Pulled Chicken Stuffed Peppers Okay this was the very, very last of our purple beans. When I went out the other day, I picked another handful. Eric doesn't like soggy peppers, so I didn't cook the meat in...I took it right from the crockpot added the cheese and broiled them for a few minutes.
Roasted Roma Tomatoes with Garlic, Gorgonzola, and Herbs with gnocci I didn't have any gorgonzola so I used a Maytag Blue Cheese. For the sides, some gnocci and beet tops with alittle of spinach we had in the fridge.

august 22 - 26

  • Eggplant with Nido's sauce With our CSA eggplant, we made fried eggplant with Nido's sauce. Eric is our fry-daddy. Just do a dry/wet/dry (flour/egg/panko breadcrumbs) on the eggplant before you pan fry them, don't forget to season them with salt when they come off.
  • Spicy tonnarelli with clams
  • Asian chopped Salad with grilled shrimp (Anna Getty's Easy Green Organic*)
  • Chicken "piccata" with goat cheese
  • fish with roasted white corn salsa (Williams-Sonoma Eating by Color*) Eric was supposed to pick up fish from Trouts, but forgot so we used the shrimp we had in the freezer instead.
